What does Pitco Prob mean?
Prob on a Pitco Solstice controller means the temperature probe circuit is open — the probe is disconnected or a wire is broken. With no temperature signal, the controller cannot read the oil temperature, so it disables all functions and will not heat. This protects the fryer from running blind on temperature. It is the open-circuit counterpart to the Hi shorted-probe fault.

- Display reads Prob and the fryer will not heat.
