High limit problem - vat temp above 460°F, disconnect power immediately
What does Frymaster E18 mean?
Vat temperature has exceeded 460°F (238°C) and the high-limit switch has failed to open. This is the most critical thermal fault on a Frymaster fryer — both the software thermal protection and the hardware safety switch have been defeated simultaneously. Disconnect power to the fryer immediately. Do not drain, filter, or approach the frypot until it cools substantially.
Symptoms
- Display shows E18 — treat this as an emergency shutdown condition.
- Vat oil is at or above 460°F and continues heating without cutoff.
- High-limit switch has not tripped despite extreme temperature.
- Oil is actively smoking or may be near flash point.
Common causes
- High-limit switch failed closed — switch element burned or welded in the conducting position.
- Latch or heat relay on the SIB board stuck closed, bypassing controller shutoff commands.
- Wiring fault that shorted across the high-limit switch terminals, removing it from the safety circuit.
- Inaccurate probe reading masked the temperature rise until E18 threshold was crossed.
Diagnostic steps
- 01
Disconnect power immediately
Turn the fryer to OFF and pull the power cord or open the dedicated circuit breaker. This is not optional — at 460°F+ the oil is approaching its flash point and every second of continued heating increases fire risk.

Do not drain the oil
Allow the frypot to cool passively with the lid open in a ventilated area. Do not drain or transfer oil at this temperature. Contact Frymaster service at 1-800-551-8633 immediately.

After cooling, inspect the high-limit switch
Test continuity of the high-limit switch at ambient temperature. If the switch shows continuity (closed) after cooling without a successful reset, the element has failed closed and must be replaced before the fryer is powered again.

Test latch and heat relays on the SIB board
With the fryer cooled and powered in standby, verify that the heat and latch relays open when the controller is not commanding heat. A relay stuck closed requires SIB board replacement per section 1.14.2 of the BIGLA30-T service manual.

Replace the high-limit switch and verify probe accuracy
Install a new OEM high-limit switch per section 1.14.4 of the service manual. Confirm the RTD probe reads accurately across the operating range before returning the fryer to service. Discard all oil from the vat.
