Frymaster E66 Error Code

Drain valve open during cooking. The drain valve opened while the fryer was cooking.

What does Frymaster E66 mean?

The FQ4000 monitors the drain valve position at all times. E66 means the controller detected the drain valve in the open position while the fryer was actively cooking — a condition that should never occur. Hot oil at cooking temperature (325–375°F) draining uncontrolled into the filter pan is an immediate burn and fire hazard. The fryer shuts off heating immediately when E66 is detected.

Symptoms

  • Display shows E66; fryer stops heating and halts the cook cycle.
  • Hot oil may be visibly draining or has drained into the filter pan.
  • Frypot oil level drops rapidly if the drain valve is physically open.
  • Drain valve handle may be in the open position or the valve actuator may be malfunctioning.

Common causes

  • Drain valve physically opened by an operator during a cook cycle — accidental or procedural error.
  • Drain valve actuator malfunction causing the valve to open without a controller command.
  • Drain valve closed-position feedback switch failed, causing the controller to believe the valve is open when it is not.
  • Wiring fault — a short circuit in the drain valve wiring causing an unintended open signal.
  • Drain valve linkage or mechanism failure allowing the valve to drift open.

Diagnostic steps

  1. Stop all cooking and clear the area immediately

If E66 appears during a live cook cycle, remove food baskets and keep personnel clear of the drain pan area. Hot oil at cooking temperature in the filter pan is a severe burn hazard.

  2. Confirm the drain valve physical position

Inspect the drain valve handle and actuator. If the valve is physically open, close it manually (use appropriate PPE — the handle and surroundings will be hot). If the valve appears closed visually, the issue may be a feedback switch fault.

  3. Check for oil in the filter pan

Carefully inspect the filter pan for oil. If oil has drained, do not initiate any filtration or return cycle until the oil temperature in the pan is safe to handle. Evaluate whether oil needs to be discarded.

  4. Test the drain valve closed-position feedback switch

With the valve physically confirmed closed, measure continuity on the closed-position feedback switch. If the switch shows open even with the valve closed, it is misaligned or failed. Adjust or replace the switch and clear E66.

  5. Inspect drain valve actuator for unexpected opening

If the valve opened without being manually commanded, inspect the actuator for mechanical failure (slipping gears, broken spring return) or a wiring fault causing an unintended drive signal. A valve that opens spontaneously requires actuator replacement.

When to call a professional

E66 is a safety-critical event — any fryer where the drain valve opens during cooking must be inspected by a licensed Frymaster technician before returning to service. A drain valve actuator or linkage that allows spontaneous opening creates an ongoing hot oil spill hazard requiring immediate component replacement. Frymaster service: 1-800-551-8633.
