What does Frymaster E71 mean?

The Oil Quality Sensor requires oil to be between 300°F (149°C) and 375°F (191°C) for an accurate TPM reading. E71 means oil temperature was below 300°F when an OQS measurement was attempted. This commonly occurs when a filtration cycle is run during a slow period after the fryer has been idling at a reduced temperature, or when the fryer was not fully recovered to operating temperature before filtration.

Symptoms

  • Display shows E71 during or after a filtration cycle.
  • OQS reading is not recorded; oil quality assessment is skipped for this cycle.
  • Fryer continues operating normally — no heating or safety systems are affected.
  • E71 may appear consistently if filtration is routinely performed during shutdown or cooldown periods.

Common causes

  • Filtration cycle initiated while oil is below 300°F — during cooldown, after shutdown, or during an idle period at reduced setpoint.
  • Fryer has not fully recovered from a product load or startup and filtration was initiated too early.
  • Manual OQS reading requested while oil is at a low temperature.

Diagnostic steps

  1. 01

Heat oil to the OQS valid range before filtering

Allow the oil to heat to at least 300°F (149°C) — ideally to normal operating temperature — before initiating a filtration cycle with OQS sampling. The OQS requires oil in the 300–375°F range to produce a valid TPM measurement.

  2. 02

    Adjust the filtration schedule

If E71 occurs regularly, the filtration schedule may be triggering during periods when oil is too cold. Review and adjust when automatic filtration cycles are timed to ensure they occur during normal cooking operations rather than after shutdown.

  3. 03

    No hardware repair is needed

E71 is a temperature condition advisory for the OQS, not a hardware fault. The OQS sensor, fryer electronics, and heating system are functioning correctly.

When to call a professional

E71 does not require a service technician. If E71 appears consistently even when oil should be in the valid temperature range, the oil temperature probe may be reading high — compare the controller display against a calibrated reference thermometer and recalibrate or replace the probe as needed.
