What does Frymaster E72 mean?

The OQS sensor measures Total Polar Materials (TPM) as an indicator of oil degradation. Very fresh oil has a low TPM value that falls below the OQS sensor's minimum measurable range. E72 means the TPM reading was too low for the sensor to produce a valid assessment — most commonly seen with newly changed oil that has not yet developed measurable polar compounds through normal cooking use.

Symptoms

• Display shows E72 during an OQS reading cycle.
• OQS result shows no quality assessment — the sensor cannot rate oil below its minimum TPM threshold.
• Most common in the first 2–8 hours of use after a fresh oil change.
• May also appear if the wrong oil type is selected in the controller setup menu.

Common causes

• Fresh or recently changed oil — TPM naturally too low for the sensor to measure.
• Incorrect oil type selected in the controller setup menu — the OQS calibration parameters don't match the actual oil being used.
• Oil type not supported by the OQS calibration (consult oil type chart in Frymaster instruction document 8197316).
• OQS sensor not properly calibrated for the specific oil type in use.

Diagnostic steps

1. 01

   Accept E72 as normal with fresh oil

   If the oil was recently changed, E72 is expected and will resolve on its own as the oil accumulates TPM through normal cooking. Continue cooking normally. The OQS will begin producing valid readings once oil has developed sufficient polar compounds.

2. 02

   Verify the oil type setting in the controller

   Navigate to the OQS or oil type setup menu in the controller and confirm the selected oil type matches the oil actually in the fryer. Consult Frymaster instruction document 8197316 for the oil type chart and the correct setting for your oil brand and type.

   Confirm the oil type is OQS-compatible

   Not all oil types are calibrated for the Frymaster OQS. If you have recently changed to a different oil brand or type, verify it is listed in the Frymaster oil type chart. Incompatible oils may produce persistent E72.

4. 04

   Contact an FAS if E72 persists with established oil

   If E72 appears with oil that has been in service for more than one full day of frying and the oil type is correctly configured, the OQS sensor may require recalibration or replacement by a Frymaster Authorized Servicer.
