What does Frymaster E73 mean?

The OQS sensor has measured a Total Polar Materials (TPM) level that exceeds the sensor's upper measurement range — meaning the oil is so heavily degraded that the sensor cannot quantify its condition precisely, only confirm that it is beyond the acceptable limit. E73 is a direct instruction to discard the oil immediately. Heavily degraded oil with very high TPM imparts off-flavors to food and may exceed health and safety thresholds for frying oil quality.
